Hainan Chicken Rice

After seeing a few of my Facebook friends posting rice cooker Hainan Chicken Rice, I finally made it. I only have a 3 cups rice cooker and it is too small to cook the rice and chicken together in the it. I do not want to buy a bigger rice cooker just for the purpose of making Hainan Chicken rice. We don’t eat a lot of rice. So I implemented to my way. I steamed the chicken separately and used the chicken broth from the steaming to cook the rice.

Here is my Simple Hainan Chicken Rice (without a big rice cooker) Recipe:

2 pieces of chicken breast with skin
2 pieces of thigh / leg with skin
5-7 slices of ginger
2 cloves of garlic (sliced)

Marinade for Chicken
1/8 teaspoon white pepper
1/2 teaspoon garlic powder
1 teaspoon Shao Xing wine
Salt to taste

Rice
2 cups of Jasmine rice
Leftover chicken skin with fat
2 1/4 cups of liquid (chicken broth and water) (adjust accordingly)
5-7 slices of ginger
2 cloves of garlic
1-2 pandan leaves (screwpine), tied in a knot
salt to taste

Ginger Sauce
Oil
Chopped ginger (make as much as you want)
Salt to taste

1. Remove any excess skin and fat on the chicken breast or thigh/leg. Save them.
2. Marinate the chicken with the Marinade for 30 minutes.
3. Arranged the chicken with the ginger and garlic in a deep plate for steaming.
4. Steam the chicken until your desired tenderness (about 15 minutes). Turn the chicken half way.
5. When the chicken is done, remove from steamer. Save the broth.
6. Rinse the rice a few times. Add in the chicken skin with fat.
7. Throw in the ginger, garlic and pandan leaves. Add a dash of salt to taste.

8. Pour in 2 1/4 cups of the chicken broth plus water.

9. Use a rice scoop to mix the rice and ingredients.
10. Turn on the rice cooker. Half way through, use the rice scoop and mix the rice again.
11. While the rice is cooking, prepare the ginger sauce.
12. Heat up oil. Mix the chopped ginger with salt. When the oil is hot, pour into the ginger. You will hear sizzling sound as the oil is touching the chopped ginger. Set aside.

13. When rice is done, cut the chicken.

14. Serve rice with the chicken and ginger sauce. Can be served with sliced cucumber and/or cilantro as garnish.

*If the rice is still not done after the rice cooker was turn off, add a 2 tablespoons of water and let it cook again.
